This is a salad I accidentally created yesterday with leftovers, as a light lunch to take into the office. I have always adored mackerel and wanted a simple, tasty (and cheap) recipe to leave me feeling energised and sprightly for an afternoon of work. Greasy, carby foods don’t suit me on weekdays, as they usually drain my concentration and energy.
To create this masterpiece yourself:
- Dismantle a piece of smoked, peppered mackerel into a bowl.
- Chuck in a handful of cherry tomatoes and a big grapple of salad leaves.
- For the ‘dressing’ add a dollop of guacamole and a blob of chunky tomato salsa.
- Lightly mix it all together.
The taste was fresh, delicious and healthy. I usually appreciate well-seasoned food, but I felt with this dish that no extra salt or pepper was needed.
Allow one fillet of mackerel per person for a light lunch or two pieces for a more hearty meal. It should take no more than a few minutes to construct and is best eaten as soon as possible after creation, so that the leaves don’t wilt.
